Ingredients
1cupcold heavy cream
8ouncespackage cream cheese,softened
¾cuppowdered sugar,sifted
2teaspoonspure vanilla extract
Instructions
If you are using a stand mixer, place the mixing bowl and wire whip attachment in the freezer for 30 minutes. If using a handheld mixer, place a medium size mixing bowl and mixer beaters in the freezer.
Remove the wire whip and mixer bowl, or the mixer beaters and bowl, and beat the cold heavy cream on high speed until stiff peaks form. This should only take about 2 to 3 minutes. Transfer the whipped cream to a separate bowl and place in the refrigerator.
Using the same bowl and a paddle attachment, or beaters, mix the softened cream cheese on medium speed for about 1 to 1 ½ minutes until smooth.
Add the sifted powdered sugar and vanilla and continue to mix at medium speed for another 1 ½ to 2 minutes or until completely incorporated and smooth.
Use a silicone spatula to fold in the whipped cream until well combined. (Folding gently combines the whipped cream and the sweetened cream cheese together without deflating the whipped cream)
Transfer the cheesecake dip to a 8 or 9 inch deep dish pie plate. Cover with plastic wrap and chill for 1 hour to allow the flavors to meld before serving.
Notes
Be sure your cream cheese is softened before mixing to ensure a smooth texture without lumps.
2 cups of whipped topping can be substituted for the homemade whipped cream.
