Ingredients
15.25ouncesFunfetti cake mix
¼cupvegetable oil
4tablespoonsbutter,melted
2eggs,room temperature
1cupvanilla frosting,store-bought can
Funfetti sprinkles for decorating
Instructions
Preheat the oven to 350°F.
Line a cookie sheet with parchment paper.
In a large bowl, mix together by hand the cake mix, oil, melted butter and eggs. Stir with a big spoon just until combined. Don’t overmix.
Using a large scoop (2 tablespoons size), drop cookies onto a cookie sheet about 2 inches apart.
Bake for 11 to 13 minutes or until the bottom edges of the cookie start to show a brown edge. They may seem a little underbaked, but once the edges look a little crisp, then remove them from the oven and let them cool on the baking sheet.
In a small microwaveable bowl, place the vanilla icing. Microwave on 50% power in 10-second intervals until the icing is melted. I used a 1-cup Pyrex glass measuring cup.
Dip the cookies halfway down into the melted icing. Lay on the parchment paper or a drying rack and sprinkle with the candy sprinkles while the icing is still warm.
Let the icing cool and harden before serving.
Notes
Spray your cookie sheet lightly with cooking spray, and then lay the parchment paper down. The sprayed sheet helps the parchment paper stay in place.
If you forget to bring your eggs to room temperature, gently place them in a cup of warm water for a few minutes to warm them up.
You can make these delicious cookies as big or as small as you like!
If you want perfectly round cookies, as soon as they come out of the oven while they are still hot on the pan, carefully use a large round cookie cutter and place it over the cookie and swirl the hot cookie around in it, and that will help round off the edges of the cookie. Move quickly to do this while the cookies are still warm. Hold the cookie sheet in one place with your hand that has the potholder.
The icing will be sticky on the bottom of the cookie until it fully sets up in 5 to 6 hours. The icing on the top will firm up quicker.
