Ingredients
7cupschow mein noodles
1½cupsbutterscotch chips
¾cuppeanut butter
½cupsalted peanuts
Instructions
Place the peanuts and the chow mein noodles in a large bowl.
In a medium saucepan over low heat, melt the chips and the peanut butter together.
Pour the butterscotch chips and peanut butter mixture over the peanuts and noodles and toss them together until they are all coated.
Drop by tablespoons onto wax paper making little piles and allow to cool.
Notes
If you want more of a wet look to the haystacks, crunch down the chow mein noodles into smaller pieces
Instead of using multiple pans to let these haystacks harden (because this recipe makes lots!), clear counter space and tape a long sheet of parchment onto the counter until they dry.
You’ll want to use wax paper, parchment paper, or silicone mats for this recipe. I suggest laying it out on a cookie sheet to make it easier to move your batches of butterscotch haystack cookies around while they’re setting if you need to.
