20ouncescrushed pineapple in 100% juiceundrained
3.4ouncesinstant banana cream pudding mix
1½cupsmini marshmallows
½cupmixed nuts dessert topping
⅓cupmini chocolate chips
8ounceswhipped toppingthawed and divided in half
10ouncesmaraschino cherries(stems removed, halved, and pat dry, plus extra whole cherries with stems for optional garnish)
Add the crushed pineapple with its juice to a large mixing bowl.
Sprinkle the pudding mix over the pineapple and stir until fully dissolved.
Fold in the mini marshmallows, mixed nuts, and mini chocolate chips.
Gently fold in half of the whipped topping until combined.
Add the halved cherries, sliced bananas, and remaining whipped topping. Cover tightly and refrigerate for at least 1 hour. Spoon into individual servings and finish with whipped topping, a drizzle of chocolate syrup, a sprinkle of reserved nuts, and whole maraschino cherries.
Notes
To help prevent the bananas from browning, lightly coat the slices with lemon juice, keeping in mind it may add a slight tang.
Do not drain the pineapple, as the juice is needed to properly dissolve the pudding mix.
Chill the salad for at least 1 hour to allow the flavors to come together.
