Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or a silicone baking mat and set aside.
Using a sharp knife or a mandoline slicer, carefully slice the apples into very thin rounds, about ⅛-inch thick. Remove the core and seeds as you go. You can leave the skin on for added texture and nutrients or peel the apples if desired.
In a small bowl, mix together the cinnamon and sugar (if using). This step is optional if you prefer unsweetened apple chips.
Arrange the apple slices in a single layer on the prepared baking sheet, making sure they do not overlap.
