Instructions
Preheat the air fryer to 400°F (200°C).
Cut the potatoes into wedges, about 1 inch thick. To do this, cut the potato in half. Then put the cut side down and cut each half in half again. Turn the slices over and cut each piece in half again, creating a wedge. You should get eight wedges per potato.
OPTIONAL STEP - if you have time, you can put the potato wedges into a large bowl of water. This will draw out some of the starch and can give you slightly crispier potato wedges. You don’t have to do this step; the wedges still turn out delicious either way.
In a mixing bowl, combine the potatoes with the oil, salt, garlic powder, paprika, and pepper. Mix well. Toss to coat them evenly with the seasoning mixture.
Place the potato wedges in the air fryer basket in a single layer. Depending on your air fryer's size, you may have to do them in batches.
Depending on how big your wedges are, cook them for 15 to 20 minutes, shaking the basket after 10 minutes to ensure even cooking.
Once the potato wedges are golden brown and crispy, remove them from the air fryer.
Garnish with fresh parsley and serve immediately.

When you're cutting your potato wedges, try to make them as similar in size as possible so they cook fully and evenly.
