Easy Gingerbread Snowman Sugar Cookies

These darling snowman themed gingerbread cookies are perfect for holiday baking.

Ingredients
  

SNOWMAN SUGAR COOKIES

  • 2 sticks butter at room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 medium Burnbrae Farms Eggs
  • 2 3/4 cups flour
  • dark blue or black nonpareils for eyes and buttons

BORDER ICING

  • 1 cup powdered sugar
  • 2 teaspoons milk
  • 1/2 teaspoon peppermint extract
  • Put into piping bag with a Wilton #3 tip to outline the snowman

FLOOD ICING

  • 1 cup powdered sugar
  • 2 tablespoons milk if too runny, add more sugar and vice versa
  • Use the piping bag to fill in the snowman; use bamboo skewer to move around icing to fill in corners

CARROT NOSE ICING

  • 1/4 cup powdered sugar
  • 1/2 teaspoon milk if too runny, add more sugar and vice versa
  • orange gel food coloring

Instructions
 

SNOWMAN SUGAR COOKIES

  • Preheat oven to 350 degrees
  • Cream butter and sugar for 1-2 minutes
  • Add eggs and vanilla and mix until just blended
  • Combine flour and salt in a separate bowl
  • Add to wet mixture
  • Mix until only combined, do not over mix
  • Put dough between two sheets of parchment paper and roll out
  • Cut into shapes and place on greased cookie sheet
  • Bake for 10 minutes
  • Let cool before icing and adding nonpareil eyes and buttons
  • Makes 20-30 cookies, depending on the size of your cookie cutter
