Ingredients
3cupscranberries(roughly chopped and thawed frozen, reserve 6 to 8 for optional garnish)
20ouncescrushed pineappledrained well
1cupdiced gala applepeeled and cored
¾cupgranulated sugar
2teaspoonlemon juice
2cupsmini-marshmallows
¼cupwalnutschopped
12ouncesCool Whipthawed
Instructions
In a large mixing bowl, add the cranberries, pineapple, and apples and stir to combine.
Sprinkle the granulated sugar evenly over the fruit mixture.
Pour the lemon juice over the mixture, then use a large spoon to stir everything together until fully combined. Cover tightly and refrigerate for at least 4 hours.
Remove the bowl from the refrigerator and drain off any excess liquid.
Add the mini marshmallows, chopped walnuts, and whipped topping, then gently stir until all the ingredients are evenly incorporated.
If you’re using the reserved cranberries for garnish, slice them in half and scatter them over the top of the salad.
Notes
If you’d like a sweeter cranberry salad, you can increase the sugar to 1 cup to help balance the tart flavor of the cranberries.
Stir the mixture gently so you don’t crush or break apart the fruit.
If you have extra time, let the salad chill in the refrigerator for a couple of hours before serving so the flavors can blend together.
