Sugar Cookie Bars

Amazingly soft bars topped with a bright and colorful frosting will make these sugar cookie bars a much-requested treat.

  • 1/2 cup unsalted butter room temperature
  • 3/4 cup white sugar
  • 2 eggs room temperature
  • 3 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cornstarch


  • 2 containers frosting
  • 1 cup confectioners sugar


  • 1 cup unsalted butter room temperature
  • 2 1/2 cups confectioners sugar
  • 3 to 4 tablespoons heavy cream
  • 2 teaspoon vanilla extract
  • salt to taste


  • red food coloring red makes the pink
  • nonpareils



  • Preheat the oven to 350°F then prepare a 9x9 pan with nonstick spray.
  • Cream butter for a minute, then add sugar and continue to beat.
  • Once mixed and fluffy, add eggs and vanilla extract then mix.
  • In a separate bowl, combine dry ingredients and whisk.
  • Slowly add dry ingredients to the wet ingredients and continue mixing with a hand mixer.
  • Put into the pan and bake for 25 minutes until lightly browned. Do not overbake!
  • Cool completely after baking before frosting.


  • With a handheld mixer, beat the butter until creamy. Slowly add the other ingredients and mix on low. Once everything is added, slowly turn the speed up to high and beat for 2 to 3 minutes.
  • You can add a bit more confectioners’ sugar or a little more heavy cream if you need to adjust the consistency.
  • Frost the bars once fully cooled and top with nonpareils as desired.
