Sugar Cookie Bars
Amazingly soft bars topped with a bright and colorful frosting will make these sugar cookie bars a much-requested treat.
- 1/2 cup unsalted butter room temperature
- 3/4 cup white sugar
- 2 eggs room temperature
- 3 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons cornstarch
- 2 containers frosting
- 1 cup confectioners sugar
- 1 cup unsalted butter room temperature
- 2 1/2 cups confectioners sugar
- 3 to 4 tablespoons heavy cream
- 2 teaspoon vanilla extract
- salt to taste
- red food coloring red makes the pink
Preheat the oven to 350°F then prepare a 9x9 pan with nonstick spray.
Cream butter for a minute, then add sugar and continue to beat.
Once mixed and fluffy, add eggs and vanilla extract then mix.
In a separate bowl, combine dry ingredients and whisk.
Slowly add dry ingredients to the wet ingredients and continue mixing with a hand mixer.
Put into the pan and bake for 25 minutes until lightly browned. Do not overbake!
Cool completely after baking before frosting.
With a handheld mixer, beat the butter until creamy. Slowly add the other ingredients and mix on low. Once everything is added, slowly turn the speed up to high and beat for 2 to 3 minutes.
You can add a bit more confectioners’ sugar or a little more heavy cream if you need to adjust the consistency.
Frost the bars once fully cooled and top with nonpareils as desired.
