Carbonara Pasta

Carbonara pasta is a tasty Italian meal. It's quick and easy to make a filling pasta dish complete with a creamy homemade white sauce.

  • 1 package fettuccini 500g
  • 1 tbsp olive oil extra virgin
  • 1 medium white onion diced
  • 2 tsp garlic
  • 1 cup heavy cream 33%
  • 4 large eggs lightly beaten
  • 1/2 cup Romano cheese grated
  • 1 cup real crumbled bacon
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp fresh parsley minced


  • Cook pasta in 2 Quart saucepan until tender, 10 to 12 minutes. Drain then place cooked pasta in a large bowl. Set aside.
  • In a large 32 inch skillet cook olive oil, onion, and minced garlic over medium-high heat until onions are tender, about 3 to 4 minutes. Use a spatula to scrape all this into the bowl of noodles.
  • In a small 1-quart saucepan heat heavy cream over low heat until it starts steaming, not simmering you don’t want this too hot.
  • Scoop 3 tablespoons of heated cream into the bowl with beaten eggs and whisk until well mixed.
  • Whisk eggs into the cream in the pot. Stir this constantly over the lowest heat until it reaches a temperature of 160F.
    TIP: Very important to whisk constantly and remove from heat as soon as it reaches 160F so that you don’t scramble the eggs.
  • Pour over the noodle mixture immediately, don’t let the mixture sit in the saucepan longer or the eggs will start to scramble. Toss to mix.
  • Sprinkle Romano cheese, bacon, salt, and pepper over top and toss to mix.
  • Sprinkle minced parsley over top before serving.
  • Serve hot.
