Butterscotch Haystacks

These classic butterscotch haystacks are the perfect blend of crunchy chow mein noodles with salty peanuts, melted peanut butter and butterscotch chips for the perfect no-bake treats!

  • 7 cups chow mein noodles
  • cups butterscotch chips
  • ¾ cup peanut butter
  • ½ cup salted peanuts


  • Place the peanuts and the chow mein noodles in a large bowl.
  • In a medium saucepan over low heat melt the chips and the peanut butter together.
  • Pour the butterscotch chips and peanut butter mixture over the peanuts and noodles and toss together until all coated.
  • Drop by tablespoons onto wax paper making little piles and allow to cool.


TIP: If you want more of a wet look to the haystacks,  crunch down the chow mein noodles to smaller pieces
TIP: Instead of using multiple pans to let these haystacks harden (because this recipe makes lots!), clear counter space and tape a long sheet of parchment onto the counter until they dry.  
TIP: You’ll want to use wax paper, parchment paper, or silicone mats for this recipe. I suggest laying it out on a cookie sheet to make it easier to move your batches of butterscotch haystack cookies around while they’re setting if you need to.
