Ingredients
Two packages of Aidells Meatballs Teriyaki and Pineapple
Six slices Jimmy Dean Hickory Smoked Bacon
1can chunk pineappledrain and reserve the juice
1yellow pepper cut into bite-size pieces
1orange pepper cut into bite-size pieces
2/3cupbrown sugar
½cupketchup
4tablespoonrice wine vinegar
2tablespoonsoy sauce
Pineapple juice from the can of chunk pineapple with water added to equal 2 cups
3tablespooncorn starch
Garnish: Green onions
Instructions
In a large skillet cook the slices of bacon until crisp. Remove to a paper towel and let cool. Then chop into small pieces.
In a large skillet add the brown sugar, ketchup, vinegar, and soy sauce and bring to a boil over high heat.
Whisk together the pineapple juice/water mixture along with the cornstarch. Pour this into the boiling sauce and bring back to a boil, whisking until thick.
Add the meatballs into the sauce.
Add the chopped peppers and pineapple and simmer over medium heat for 20 minutes until meatballs are heated through and peppers have softened a bit.
Serve over hot rice and garnish with green onions and bacon.
