  • Two packages of Aidells Meatballs Teriyaki and Pineapple
  • Six slices Jimmy Dean Hickory Smoked Bacon
  • 1 can chunk pineapple drain and reserve the juice
  • 1 yellow pepper cut into bite-size pieces
  • 1 orange pepper cut into bite-size pieces
  • 2/3 cup brown sugar
  • ½ cup ketchup
  • 4 tablespoon rice wine vinegar
  • 2 tablespoon soy sauce
  • Pineapple juice from the can of chunk pineapple with water added to equal 2 cups
  • 3 tablespoon corn starch
  • Garnish: Green onions


  • In a large skillet cook the slices of bacon until crisp. Remove to a paper towel and let cool. Then chop into small pieces.
  • In a large skillet add the brown sugar, ketchup, vinegar, and soy sauce and bring to a boil over high heat.
  • Whisk together the pineapple juice/water mixture along with the cornstarch. Pour this into the boiling sauce and bring back to a boil, whisking until thick.
  • Add the meatballs into the sauce.
  • Add the chopped peppers and pineapple and simmer over medium heat for 20 minutes until meatballs are heated through and peppers have softened a bit.
  • Serve over hot rice and garnish with green onions and bacon.
