Ingredients
2/3cupmilk
2ouncessemi-sweet chocolatecheck how many squares that is on your particular brand
Dash of salt
2cupssugar
2tablespoonlight Karo syrup
2tablespoonbutter
1teaspoonvanilla
Instructions
Butter an 8x8 square dish or use parchment paper and butter the paper. Set aside.
In a medium sauce pan add the milk, chocolate, salt, sugar and Karo syrup. Heat over medium-high heat until it comes to a rolling boil stirring constantly.
Once the rolling boil is reached turn the heat off and do not stir.
At the soft boil stage let it boil for 2-3 minutes and do not stir, just let it boil.
Using a candy thermometer let it boil until it reaches the soft ball stage which is 130-140 degrees.
Remove from heat and stir in the butter and vanilla.
Using a wooden spoon vigorously stir/beat the fudge until it loses its shine and it starts to thicken up. That may take 5-15 minutes. (Get your arm workout in!)
Pour into the buttered dish and let cool into solid usually about 3 hours to overnight.
