Ingredients
1headmedium green cabbage
3tablespoonsolive oil,extra virgin
2tablespoonsapple cider vinegar
1teaspoongarlic powder
1teaspoononion powder
½teaspoonkosher salt
½teaspoonfresh cracked black pepper
½teaspoonpaprika
2teaspoonsfresh chopped parsley,garnish
Instructions
Remove any really loose leaves from the outside of the cabbage. Make a clean slice off of the root end. Then turn that flat end onto your cutting board. This will give stability while cutting the steaks. Now slice the cabbage in half. While the cabbage is still standing on the flat end, continue to slice outward from the middle into ¾ to 1-inch steaks.
Add the olive oil and vinegar into a small bowl and stir.
Add the garlic powder, onion powder, kosher salt, cracked black pepper, and smoked paprika to a small bowl. Stir to mix.
With your cabbage steaks now lying flat on a sheet pan or cutting board, use a pastry brush or a spoon to spread the olive oil mixture over both sides of the cabbage steaks. (turn the steaks over, gently holding the sides together as you turn).
Now sprinkle about 1½ teaspoons of the spice mixture on one side of the cabbage. Make sure to get it all along the edges. You can use a spoon or use your fingers to sprinkle the seasoning onto the cabbage steak.
Lightly spray the air fryer basket with olive oil spray or avocado cooking spray.
Gently place the cabbage steak into the air fryer basket with the season side up. (If your cabbage steaks are a bit wide, you may need to cook the cabbage steaks in batches) Cook at 360°F for 12-15 minutes. Check them at 12 minutes to check for golden brown edges. Depending on how thick you cut your steaks, you can continue to cook in 2-minute increments, checking at the end of each cook time.
Remove cabbage steaks from the air fryer using a spatula and garnish with the chopped parsley.
Optional: You can brush a little more olive oil on the cabbage steaks after removing them from the air fryer.
Notes
Make sure to check your air fryer manual for cooking time guidelines for your specific model, as cooking times and temperatures vary depending on the type of air fryer you have.
When cutting the cabbage into steaks or wedges, try to make them as uniform in size as possible. This ensures even cooking.
Add ¼ cup of water to the bottom of the air fryer basket (if you use a basket air fryer like Cosori). This water helps with clean up, keeps any burned bits from smoking, and adds a little steam to the cooking, too, which works great with cabbage.
