Instructions
1. Peel and dice apples into half inch pieces; place in a large bowl.
2. Add brown sugar, salt, cinnamon, nutmeg. Stir to coat pieces.
3. Transfer to medium sauce pan; add butter.
4. In a small measuring cup, measure ½ cup of water and stir in corn starch. Pour into sauce pan with apples and butter.
5. Bring to a low simmer; cook for 15-20 minutes until apples are fork-tender.
6. Roll out dough; use round 3 ½ inch cookie cutter to cut out circles.
7. Make egg wash: beat one egg with 1 tablespoon of water.
8. Scoop a tablespoon of apples into the middle of half of the circles.
9. Use your finger to apply egg wash to the very outside of the circles to act as a glue. Place a dough circle over top; use a fork to press the edges which seals the dough crusts together.
10. Brush with egg wash and sprinkle with raw sugar.
11. Bake at 425 for 12-14 minutes or until golden brown.
