Homemade Potato Bites

Ingredients

large baking potatoes

cup
shredded zucchini
1 ½
teaspoons
sea salt

teaspoon
pepper
½
teaspoon
onion powder
½
teaspoon
garlic powder

tablespoon
flour

olive oil
½
cup
grated parmesan cheese
Instructions
1. Rinse and peel the potatoes. Put into a large pot and cover with room temperature water.
2. Bring to a boil and boil for 10-15 minutes.
3. Immediately remove from the water and let cool.
4. While the potatoes are cooking, shred the zucchini. Wrap the zucchini in a paper towel or cheese cloth and squeeze to drain the excess water.
5. Once the potatoes have cooled, finely shred the potatoes with a cheese grater.
6. Add the shredded potatoes and zucchini into a bowl and add seasonings. Toss the mixture together.
7. Form the mixture into 1-inch balls, then roll into cylinders.
8. Dip them in olive oil then roll in parmesan cheese. Place on baking sheet lined with parchment paper.
9. Bake at 450 for 15-20 minutes until golden brown. Makes about 36 potato bites.
