Oatmeal Chocolate Chunk Cookies

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 egg
  • 1 teaspoon instant coffee
  • 2 teaspoons vanilla
  • 1 ½ cups all-purpose flour
  • 1 ¼ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup quick cook oats
  • 1 bag dark chocolate chunks
  • 2 cups shredded sweetened coconut

Instructions

  • In mixing bowl, cream together butter and sugar until smooth and creamy.
  • Add egg, vanilla, and instant coffee.  Mix until smooth.
  • Mix in flour, oats, baking soda, and salt.
  • Stir in chocolate chunks and coconut.
  • Scoop large 2-inch scoops onto a baking sheet.
  • Bake at 375 for 14-15 minutes.
  • Remove from oven and place on a baking rack to cool.
