Add 1-2 tablespoons of olive oil to large pot and add diced onions, garlic, carrots, and celery. Season with salt and pepper and cook until veggies begin to soften. Add 1/4 cup white wine and reduce.
Remove all the chicken from the rotisserie and chop into bite size pieces. Add to veggies and cover with broth. Season again with salt and pepper.
Bring to simmer for 3-4 minutes; add noodles. Simmer until noodles have cooked through. Remove from heat and let set to cool slightly before serving.
