Homemade Chicken Noodle Soup

Ingredients

  • 1 small rotisserie chicken
  • 1 cup diced baby carrots
  • 2 stalks of chopped celery
  • 1/2 large onion diced
  • 3 cloves of diced garlic
  • 1 bay leaf
  • 1/4 cup white wine
  • 8 ounces wide egg noodles
  • 8 cups chicken broth
  • salt and pepper to taste
  • olive oil

Instructions

  • Add 1-2 tablespoons of olive oil to large pot and add diced onions, garlic, carrots, and celery. Season with salt and pepper and cook until veggies begin to soften. Add 1/4 cup white wine and reduce.
  • Remove all the chicken from the rotisserie and chop into bite size pieces. Add to veggies and cover with broth. Season again with salt and pepper.
  • Bring to simmer for 3-4 minutes; add noodles. Simmer until noodles have cooked through. Remove from heat and let set to cool slightly before serving.
