Ingredients
½cupquartered cherry tomatoes
1chopped mango
juice from ½ lime
2tbspfresh cilantro
½poundjumbo shrimp
juice from ½ lime
1tsphoney
1cloveof garlicfinely chopped
1tbspcanola oil
2avocados
1tbspcanola oil
Instructions
Stir tomatoes, mango, cilantro and lime together and let sit while preparing shrimp.
Mix lime, oil, honey and garlic in a bowl. Add salt and pepper to taste. Toss with shrimp and let marinade while grill preheats.
Skewer shrimp and cook over medium heat for 2-3 minutes on each side or until shrimp turn pink and curl. Remove from grill and chop into quarters.
Cut avocados in half and remove seed. Lightly brush with oil and grill for 1-2 minutes. Remove from grill and spoon mango salsa into the hole where the seed was and top with chopped shrimp.
