Preheat the oven to 375°F. You will need an 8x8-inch glass baking dish.
In a small bowl, stir to combine the cinnamon, salt, ground ginger, and nutmeg.
Add 1 teaspoon of the spice blend to a medium bowl with the thawed sliced peaches. Stir to coat all the peach slices in the spices. Set aside.
In another medium bowl, add the remaining spice blend, brown sugar, and melted butter. Stir to combine thoroughly.
Unroll the opened tube of crescent rolls and separate each individual triangle. At the large end of 1 triangle, place two slices of spiced peaches. Roll up the crescent dough starting at the large end and ending with the small point on the top of the roll and place it into the 8x8 glass baking dish. Repeat with the remaining peaches and crescent rolls.
Spoon the butter mixture evenly over the tops of the dumpling rolls in the dish. You can spoon any extra butter mixture in between, and on the sides, of the dumplings as well. This will help make a delicious syrupy sauce for your peach dumplings.
Carefully pour the ginger ale around and on the sides of the peach dumplings being careful not to pour it directly on top of the crescent rolls.
Bake for 22 to 25 minutes or until your peach dumplings are golden brown and bubbly. Allow them to rest on the counter for 5 minutes before serving.
