1(14.3-ounce) packageOREOs, crushed (reserve 8 whole cookies, with 5 broken in half, for garnish)
Using a small mixing bowl and a handheld mixer, beat together the softened cream cheese and the vanilla flavoring until well incorporated and smooth. Set it aside.
Using a large mixing bowl and a handheld mixer on high speed, beat together the instant pudding mix and the milk until the pudding begins to thicken about 1½-2 minutes.
Add the cream cheese mixture and continue to mix for another 1-1½ minutes.
Fold in the thawed whipped topping.
Fold in the crushed OREOs and mini marshmallows.
Transfer to a serving bowl, and decorate with the reserved cookies. Serve immediately.
TIP: You can substitute vanilla extract for the clear vanilla flavoring, if in a pinch, but it will cause the cream cheese mixture to be slightly beige in color.TIP: You can make this the night before, but keep in mind that the longer the cookies are in the pudding mixture, the softer they will become.
