4boneless and skinless chicken breasts

Instructions
Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray. Set aside.
In a small bowl, mix together the Italian seasoning, garlic powder, salt, and pepper. Season the chicken breasts with this mixture.
Place the seasoned chicken breasts into the prepared baking dish. Spoon the bruschetta evenly over the top of the chicken.
Bake uncovered for 25 minutes.
Remove the chicken from the oven and sprinkle the mozzarella cheese over the top. Return to the oven and bake for an additional 15 minutes until the chicken is cooked through and a meat thermometer reads 165°F.
Drizzle with balsamic glaze and sprinkle with fresh chopped basil before serving.
Notes
Most grocery stores sell containers of bruschetta that are perfect for this recipe.
Make sure that there is enough room in your baking dish so that the chicken doesn’t overlap. It will take the chicken longer to bake otherwise.
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your chicken as the suggested baking time approaches.
Balsamic glaze can be store-bought, or you can make your own balsamic reduction while the chicken bakes by mixing ½ cup balsamic vinegar and 3 tablespoons of brown sugar in a small saucepan. Place the pan over medium-high heat and let it come to a boil. Reduce the heat to low and allow the mixture to simmer for 15 minutes until it has thickened and reduced by about half.
