Ingredients
For the cake:
2box white cake mix
2small boxes instant vanilla pudding
2 ½cupsmilk
1cupoil
8egg whites
1/3cupredwhite and blue sprinkles + more for garnishing (I bought two bottles to be sure to have enough... one for the mix and one for topping)
For the frosting:
4sticks of butter
4cupspowdered sugar
1tablespoonvanilla
½teaspoonsalt
Instructions
For the cake:
In a large mixing bowl, combine cake mix, pudding, milk, oil and egg whites. Mix until well combined.
In the large part of the pan (the bottom of the cupcake) pour in 4 cups of cake batter.
In the top of the cupcake, pour in 3 cups of cake batter. (You will have some left over to use for mini cupcakes if you'd like!)
Bake at 350 degrees for 60-70 minutes. After 40 minutes, place foil over the top of it to keep it from getting too brown. Insert a toothpick into the middle, if it does not come out clean, return it to the oven for a few more minutes.
Let the cake cool completely before assembling.
For the frosting:
Add the butter, powdered sugar, salt and vanilla to a stand mixer fitted with a whisk attachment. Mix on low until the powdered sugar is incorporated into the butter. Then turn on high and beat for 10 seconds. Stop the mixer and scrape down the sides of the bowl. Then turn the mixer back on and whip on high for another 10 seconds, then stop and scrape the bowl. Turn back on and whip for another 10 seconds until it’s fluffy and has increased in size.
Remove the cooled cake from the pans. Gently slice off the top of each piece so they will evenly fit together.
To assemble:
Cut a hole in the middle of the bottom part of the cake. Make sure you do not cut all the way through to the bottom of the cake. Scoop out the middle and fill to the top with SKITTLES® America Mix Candy.
Add frosting around the hole and then place the top part of the cake on top.
Frost the top and add additional sprinkles and leftover SKITTLES® America Mix Candy.
