WHITE CHICKEN ENCHILADAS

INGREDIENTS:

– 3 cups shredded chicken – 1/2 yellow onion – 1 tsp salt – 3/4 tsp pepper – 2 tsp minced garlic – 1 tbsp olive oil – 2 1/2 cups Monterey jack cheese – 8 large flour tortillas – 3 tbsp butter – 3 tbsp flour – 2 cubes chicken bouillon – 1 cup sour cream – 4 ounces green chilies – 1 cup Mexican blend cheese

Microwave water and chicken bouillon cubes for 2 mins

Cook onion and minced garlic on skillet

Remove from heat then add chicken, salt, and pepper

Stir to combine

Place chicken mixture then monterey jack on tortillas

Roll tightly and place the seam side down in the baking dish

Melt butter in saucepan then add flour and whisk

Add broth and whisk until smooth and creamy

Mix in sour cream, salt, pepper, green chilies, and monterey jack

Pour white sauce over enchiladas

Top with mexican blend cheese

Bake at 425 for 20 mins
