SPINACH AND ARTICHOKE QUESADILLAS

INGREDIENTS:

– 1/2 tbsp olive oil – 1/2 cup cream cheese – 1 tsp garlic minced – 8 oz artichoke hearts – 2 cup baby spinach leaves – 2 cup mozzarella cheese  – 1/4 cup parmesan cheese  – 2 large tortillas

In a pan heat oil and cream cheese for 2-3 mins

Stir in garlic, artichokes, and spinach

Add in mozzarella and parmesan until melted

Place tortilla in pan and scoop on spinach mixture

Fold the tortilla then let brown slightly

Cut each tortilla in 3 triangles
