ROASTED VEGETABLES

INGREDIENTS:

– 2 cup baby potatoes – 2 cup carrots – 2 cup sweet potatoes – 2 cup brussels sprouts – 2 cup asparagus  – 1 yellow bell pepper – 1 red bell pepper – 1 cup red onion – 3 cloves garlic. minced – 1/2 cup extra virgin olive oil – 1 tsp cracked black pepper – 1/2 tsp sea salt – 1/2 tsp garlic powder – 1 tbsp dehydrated oregano leaves – 1 tbsp dehydrated parsley

Wash and chop all vegetables then place into bowl

Pour olive oil over top of vegetables

Add all spices into the bowl

Toss to mix and evenly coat all vegetables

Spread vegetables evenly onto parchment lined baking sheets

Bake for 40 minutes total in the oven at 425F
