– 2 tablespoons olive oil – 1 white onion, diced – 4 cloves garlic, minced – 1 pound ground beef – 1 can of 15 oz corn kernels, rinsed and drained – 1 can of 15 oz black beans, rinsed and drained – 1 envelope taco seasoning, 2 tbsp – 14 ounce jar chunky salsa, mild or medium – 1 cup Minute Rice, uncooked – 1 1/2 cups chicken broth, low sodium – 2 cups shredded Mexican cheese
