LEMON CHICKEN

INGREDIENTS:

– 4 boneless skinless chicken breasts, about 2 pounds – 1 cup flour – 1 tablespoon salt – 1/2 teaspoon pepper – 4 tablespoons butter, divided – 2 tablespoons olive oil – 1/2 cup chicken broth – 1/2 cup lemon juice – 1/4 cup fresh parsley, chopped – 8 thin slices of lemon

Place chicken into Ziploc bag then pound

In a separate ziploc combine flour, salt, and pepper

In a skillet melt butter and olive oil

Place chicken into  bag of flour then shake to coat

Shake off excess flour then place into pan

Cook chicken until golden brown then remove

Add chicken broth to the pan

Then add lemon juice and parsley

Stir until well combined

Add lemon slices and cook for 2 mins

Return chicken and simmer for few mins
