HOW TO MAKE

WHITE CHICKEN ENCHILADAS

INGREDIENTS:

– 3 cups shredded chicken – 1/2 yellow onion – 1 tsp salt – 3/4 tsp pepper – 2 tsp minced garlic – 1 tbsp olive oil – 2 1/2 cups Monterey jack cheese – 8 large flour tortillas – 3 tbsp butter – 3 tbsp flour – 2 cubes chicken bouillon – 1 cup sour cream – 4 ounces green chilies – 1 cup Mexican blend cheese

Microwave water and bouillon for 2 mins

Cook onion and garlic

Add chicken, salt, and pepper

Stir to combine

Place chicken and Monterey on tortillas

Roll tortillas and place down on dish

In a pan whisk melted butter and flour

Whisk in broth until smooth

Mix in sour cream, salt, pepper, chilies, and Monterey

Pour white sauce over enchiladas

Top with Mexican blend cheese

Bake at 425 for 20 mins
