CHICKEN FAJITA CASSEROLE

INGREDIENTS:

– 2 lb chicken tenders – 1 packet fajita seasoning – 1/2 green bell pepper – 1/2 red bell pepper – 1 medium onion  – 2 tbsp olive or vegetable oil – 8 oz cream cheese –  1 tbsp butter – 1 1/2 cup colby Monterey Jack cheese  – 1/4 cup mexican crumbling cheese – 1/4 cup fresh cilantro

Sprinkle chicken with fajita seasoning then bake

Cut chicken into bite size pieces

Saute peppers and onion for 8-10 mins

Add cream cheese, fajita seasoning, and colby monterey to pan

Add chicken and vegetables to skillet

Spread mixture into pan then top with cheese

Bake for 15 mins at 350
