BROCCOLI AND  CHEDDAR POTATO SKINS

INGREDIENTS:

– 4 small russet baked potatoes – 3 tbsp olive oil – 3 cup small cut broccoli florets – 1/2 cup sweet yellow onion – 1/2 tsp kosher salt – 1/2 tsp black pepper – 1/2 cup sour cream – 2 cup cheddar cheese shredded and divided – 1 1/2 to 2 tsp sour cream per potato skin – 1 green onion sliced

Pierce potatoes then microwave for 15 mins

Add oil and onions to skillet

Saute for 5 mins

Add broccoli florets

Cook for 1 to 1 1/2 mins

Slice potatoes in half long ways

Scoop out the potato pulp

Lightly brush with olive oil

Bake for 15 mins at 425

In a bowl add broccoli mix, sour cream, and cheese

Mix until well combined

Spread broccoli mixture in each potato

Sprinkle with cheese

Bake for 5 mins at 425
