These Skillet Brownies are the perfect way to enjoy a sweet treat with a scoop of cold, creamy ice cream on top!
You guys. It’s finally summer here.
We didn’t get a ton of snow this winter, but it was cold… for what seemed like a hundred years. I have missed the sunshine, the green leaves, the birds chirping oh so much.
Now finally… FINALLY…
This means it’s time for time outside together as a family. And of course, some delicious summertime food as well.

Last week, we had our first outdoor dinner of the season. Let me tell you, outdoor dinners are some of my favorite things.
I love our backyard. In the warmer months, it’s filled with beautiful, lush green plants. A huge, old tree canopies across part of the yard, creating the perfect amount of shade.
It’s a perfect oasis for our family to enjoy. The outdoor table and chairs are finally pulled out of storage. I’m able to sit and relax with a book in the sunshine while the boys run off their loads of energy as dinner cooks on the grill.
(Seriously… how do they have so.much.energy at the end of a day?!)
The boys have an inflatable bouncy house that they can’t get enough of. It made it’s first appearance of the season during our dinner as well.
I let the boys jump to the heart’s content while dinner was cooking. Once dinner is ready, we load up our plates and each grab a chair. Another thing I love about outdoor dinner nights: I always use disposable plates and utensils. Clean up is such a snap!
While we nosh on our food, we talk about our days. The boys fill me on the happenings at school and I tell them about my day. We talk about upcoming adventures we want to do as a family. They also happily tell me whatever story they’re currently imagining about.
These boys have some big imaginations. Their story lines could win awards I think! Sometimes, the neighbors wander over and we chat. I have the world’s best neighbors. Hands down.
Anyways… back to food.
It always goes back to food with me. 😉

The Talenti Gelato Pints are some of my favorite things ever. The flavors are phenomenal and they are so rich and creamy. This week, I decided that we should have a little chocolate to go with our ice cream.
Cast iron skillet brownies were the perfect partner with Talenti Vanilla Bean Gelato. I’m excited to share this delicious recipe with you!
Ingredients for Skillet Brownies
This skillet brownie recipe is very simple, making it perfect for busy weeknights when you want a special treat. It would also be great to serve last minute guests!
You’ll need a box of brownie mix (plus the ingredients the brownie mix calls for), white chocolate chips and cream filled sandwich cookies, crushed.
Plus, your Talenti Gelato. I chose vanilla bean, but you might want to try another flavor.
Mint Chocolate Chip or Cookies and Cream would work well for this, too. You can’t go wrong because they’re all good. Trust me. I’ve tested them.
How to Make Skillet Brownies
I’ve never tried to bake brownies in a cast iron skillet before but this easy recipe made me happy I tried! This version is semi-homemade because I’m using a brownie mix. You could also make brownies from scratch if you like!
Let’s get started!
- First, you’ll mix the brownies according to package directions.
- Once mixed, stir in white chocolate chips and one cup of the crushed cookies.
- Then, pour into a 10-inch skillet.
- Bake at 325 degrees for 25-30 minutes or until right before brownies are cooked through.
- Remove from the oven and let cool slightly.
Scoop your favorite flavors of ice cream on top and enjoy!
Please note, you don’t want to pour too much batter in the pan or you’ll risk having over cooked brownies on the outside and undercooked on the inside. I’ve learned this lesson the hard way in the past. 😉
Instead of doing brownie mix in a cast iron skillet, you could also divide the batter up into those little cast iron skillets and make individual brownies.
Plus, those little individual size ones are so cute and my boys love having their “own”. These skillet brownies, still warm and topped with Talenti Gelato proved to be the perfect ending to our day.
Our backyard fell totally silent as everyone savored the delicious treat. Total silence as we eat is a sign that my boy’s tastebuds are in heaven.

- 1 box brownie mix plus ingredients according to package
- 1 cup white chocolate chips
- 1 ½ cups crushed cream filled sandwich cookies
- Mix brownies according to package directions.
- Stir in white chocolate chips and 1 cup of the crushed cookies.
- Transfer to a 10 inch skillet (mine is a 7 inch skillet and I had mix left over that I put into two ramekins)
- Bake at 325 for 25-30 minutes or until right before brownies are cooked through.
- Remove from oven and let cool slightly. Scoop your favorite flavors of ice cream on top and enjoy!
