I’m excited to report that school is finally out for the summer.
It felt like a long school year to me… like maybe we really did two years back to back because it felt so long.
BUT we did it. We finished strong!
That said, I am definitely ready for the longer, lazier days of summer and the adventures our family will have.
While we don’t have any big trips planned, but we do have lots of mini adventures on our list.
It’s our first summer without sports, so I feel a sense of carefree freedom that I haven’t felt in years past.
We don’t have a set schedule to follow for the first summer ever. It feels like we might actually be able to enjoy a real, true summer vacation.
To say I’m thrilled is an understatement.
Every day, my boys add things to our summer list that they would like to do. My two youngest boys are asking to go camping for the first time. With three busy boys, I know that will be quite the adventure indeed. 😉
I’m also anticipating day trips to the beach, kayak excursions, library visits and evenings in the backyard. I couldn’t be more excited!
In between our little adventures, I know we’ll be enjoying some simple meals together.
During the summer months, I keep our menu as simple as possible. I want to go out and have fun and I also don’t want to heat up the kitchen.
Chicken is a staple ingredient in our home and I’m always watching for new recipe ideas to create.
This unique southwestern chicken recipe I’m sharing with you today was a hit with our family. I think you’ll enjoy it as well.

Even if we’re not rushing off to after school events during the summer, I still don’t want to be tied down in the kitchen unnecessarily.
There are sprinklers to run through, flowers to pick and sunshine to enjoy. I don’t want to be inside the kitchen for no reason.
However, a quick meal doesn’t mean skimping on flavor though. No dull food here, thank you very much. No sir.
That’s another reason to love this southwestern recipe — it delivers on great taste!
Ingredients for Southwestern Chicken with Brown Rice and Quinoa
You’ll be using vegetable oil, bell peppers, frozen corn, boneless skinless chicken breast, flour, water and a package of Knorr® One Skillet Meals-Southwestern Chicken Brown Rice & Quinoa.
This recipe serves four, so if you’re feeding a crowd — or have growing, hungry boys like me — you could easily grab a couple packages of the Knorr® One Skillet Meals and double the other ingredients.
You could also make extra to quickly heat up for lunch the next day.
I’d also grabbing some tortillas to make this delicious meal into roll ups or wraps.

How to Make Southwestern Chicken with Brown Rice and Quinoa
To begin, you’ll heat a tablespoon of vegetable oil in a large, nonstick skillet over medium-high heat. Cook the peppers and corn for six minutes. Remove from the skillet and set aside.
Add another two tablespoons of vegetable oil to the same skillet. Toss your chicken with the flour and then cook for three minutes until browned. (It will finish cooking when you add in the other ingredients.)
Quick tip: you toss the chicken in flour to help it stay moist during cooking!
Next, add water and the contents of the Knorr® One Skillet Meals to the skillet and bring to a boil.
Cover, turn down the heat to medium-low and simmer 22 minutes or until rice is tender. (For perfectly cooked brown rice & quinoa, make sure to keep covered.)
Stir in your reserved peppers and corn. Remove from heat and let stand covered two minutes. Enjoy!
What to Serve with Southwestern Chicken with Brown Rice and Quinoa
We love sour cream in our house, so I added a bowl of sour cream and another of mild salsa to our dinner table.
This really is a perfect one skillet meal, so it’s a complete dish without worrying about making extra sides.
During most summer meals, you’ll also find a veggie platter on our table for munching. Fresh fruit is a summertime staple dessert. So easy and refreshing!

Southwestern Chicken with Brown Rice and Quinoa
- 3 tablespoons vegetable oil divided
- 2 bell peppers 1 each red and green, thinly sliced
- 1 cup frozen corn
- 1 pound boneless skinless chicken breasts, sliced (season with salt & pepper, if you'd like)
- 1 tablespoon flour
- 2 cups water
- 1 package Knorr® One Skillet Meals-Southwestern Chicken Brown Rice & Quinoa
- HEAT 1 Tbsp. of the oil in a large nonstick skillet over medium-high heat and cook your peppers and corn 6 minutes. REMOVE everything from skillet and set aside.
- ADD remaining oil to the same skillet. Toss your chicken with flour and then cook for 3 minutes until browned. (Chicken will continue to thoroughly cook with the brown rice & quinoa.) Add water and contents of Knorr® One Skillet Meals to the skillet and bring to a boil. Cover, turn down the heat to medium-low and simmer 22 minutes or until rice is tender. (For perfectly cooked brown rice & quinoa, make sure to keep covered.)
- STIR in your reserved peppers and corn. Remove from heat and let stand covered 2 minutes. Now it's delicious, dig in!
