We’re still in the process of making it our home and that’s taking more time than I hoped it would. You know how that goes: projects always end up taking more time and costing more than you anticipate.
Oh well — I’m loving the process of creating a new space. I’m also loving spending time in the kitchen again. In between tasks, I’ve been baking yummy treats.

Since I have zero time these days, it is a good thing I know how to make cake mix cookies.

Unpacking boxes, hefting furniture, and re-arranging furniture takes lots of energy. My oldest has been my champion helper. He wants to know how many times I think a single chair needs to be moved “just a little bit”.
I don’t know that answer.
But I do know that sometimes just a little tweaking makes all the difference, whether it’s furniture, food, or just the right word.
In between furniture moves and unpacking “just one more box”, we’re noshing on these semi homemade cookies.
They’re so simple to make and I love the chewy texture and chocolate flavor.
Cake mix pudding cookies are a super-easy way to make cookies when you’re way too busy to spend a lot of time in the kitchen.
Semi Homemade Cookie Ingredients
You’ll only need a handful of ingredients for this treat!
Here’s what you need: one box of double chocolate cake mix, one box of instant chocolate pudding, vegetable oil or coconut oil, eggs and chopped walnuts.
How to Make Semi Homemade Cookies
In a large bowl, add the cake mix, oil, water, egg and chocolate pudding.
Mix until well combined and stir in walnuts, if desired. You can leave them out, but I love the extra crunch they offer!
Roll into 1 1/2 inch balls and bake according to the cake mix package directions.
Can You Freeze Semi Homemade Cookies?
Yes! I love baking up some of these cookies and then storing them in an airtight, freezer safe container. You can thaw them all or just grab one at a time when you want a sweet treat.
