With all of the sunshine, fresh produce and outdoor activities that happen in summer, healthy choices seem a little easier to me. Knowing that the transition to cooler weather isn’t too far away, I have been mindful of having a plan in place this year so I don’t fall into bad habits. In the past, when the thermometer dropped, I have often found myself wanting to stay cocooned inside once I got home, while I reached for comfort foods. Since I’ve made the shift to full-time blogging, I feel like I am almost redesigning my life. I am determined to remain mindful of healthy choices so I can be the best version of me. Since August is Health Awareness Month it seems like a super time to be making some plans.

A recent piece on coconut talks about its benefits: rich in B vitamins, minerals and trace elements, supports immune functions, and acts as an anti-inflammatory agent. And this interesting tidbit: Coconut waters electrolyte composition is almost identical to human blood plasma and was used during WWII as an IV drip. Who knew?! Makes me want to eat more coconut!
These are great eaten as is, or served over a dollop of whipped cream and lightly drizzled in caramel sauce.
