Never Think About What to Make for Dinner for the Next Two Months with My Lazy Cooking Bundle
A few weeks ago, I threw a small baby shower for my great friend Jolene, co-owner of Two Blonde Chicks Inc. Design and Marketing (and also the designer of the Spaceships and Laser Beams Xtreme Awesomeness Collection). Since it is Jolene’s third child, we threw an intimate gathering for our families plus a few close friends. Let me just say that when you’re throwing a shindig for a professional graphic designer, it puts a little pressure on you to throw a stylish little event.
The theme was “Our Precious Gift” and naturally we developed a new collection for the event. The awesomely talented Spaceships and Laser Beams Etsy Collective member, Catherine Cassidy, stepped up to the plate, not only designing the new “Our Precious Gift” Baby Shower Collection but also catering the event. (Never one to stop with just one talent, Catherine is a trained graphic designer and owner of Clever Monkey as well as a fabulous vegan baker and owner of Goodness Bakeshop.)
These red velvet cupcakes tasted as awesome as they look.
We included a “J” on the dessert table because everyone in their family – mommy,daddy, brother, sister and baby to be – has a first name that starts with the letter J.
So here’s a little secret about Catherine’s red velvet cupcakes: the have beets in them. Here’s another secret: they’re actually quite delicious. For real.
The appetizer Catherine made was a vegan greek salad on a stick with garlic oregano dressing on the side. It was a lot of fun. Since the shower theme was Our Precious Gift I wanted to reflect that in the lunch as well. I found these great wooden trays and they worked perfectly as a substitute for plates. I just placed a layer of wax paper beneath the food.
And here’s our “main course” sandwich trio. Catherine made a cucumber sandwhich on tomato bread, mediterranean hummus spirals and pesto asparagus puffs.
