Peanut Butter and Jelly Sushi makes a fun and easy lunch idea for kids!

Ah, back to school time.
One of my absolute favorite times of year, if I’m honest.
Before becoming a mama, I was an elementary school teacher. It was a job that I absolutely loved. I was born to be a teacher!
That said, as you can imagine, all my life I have loved learning and being at school.
To some degree, the start of school feels more like the “new year” to me than January 1st does.
I love the anticipation of that first day. I love purchasing crisp, new supplies. I love being in the classroom.
All the possibility of things to be learned and adventures to be had and new friends to be made!
Even though I’m not teaching anymore, I still love all these things. And I’m excited for my sons to experience them as well.
My oldest son started kindergarten this year.
Even though he’s been in preschool, starting kindergarten felt like a big deal to me and such a huge transition of seasons for our family.
I cried lots of tears that first day after dropping him off.
I didn’t need to though… I’m happy to report that the first week has gone great and he’s loving his teacher and class!
My younger son is attending preschool as well, which means for a short portion of each day, both my babies are out taking on the world.
It’s hard to believe that they’re old enough for these shenanigans already!
One thing about school that I haven’t always enjoyed is packing a lunch. Sometimes it’s hard to get inspired to make something they’ll want to eat. Can I get an amen!?
If you’ve ever been responsible for making a kid’s lunch, you know the recipe needs to be simple and quick. It also needs to fill them up and provide them great energy for all the activity they’re enjoying.
Over the years, I’ve learned that involving the little guys in the kitchen is a great way to ensure they’re more excited about what they’re eating.
These peanut butter and jelly “sushi” rolls are no exception.
Not only is this fun twist on the classic sandwich tasty, it’s fun to make.
My youngest loved getting involved to make the best PB & J he’d ever had, as he later declared over lunch.
He decided to use chopsticks to help him eat these roll ups. Which was very amusing for me. 🙂

Peanut Butter and Jelly Sushi Ingredients
You’ll only need three things to create this fun lunch food: Jif® Peanut Butter, Smucker’s® Strawberry Jam and your favorite bread.
Because I’m a busy mama, I do a lot of my shopping at Walmart.
My little buddies love to tag along and help out. Sometimes we shop in the store and other times we do the curbside order — which is a real time saver on busy days!
No matter what, I’m able to get great savings on our favorite products, all in one place. They make shopping for lunch supplies a breeze!
How to Make Peanut Butter and Jelly Sushi
In a small bowl, mix together peanut butter and jelly. Little hands make great helpers for stirring, in my opinion.
I’ve always loved mixing my peanut butter and jelly because that’s how my grandma made it when I was little.
I thought it was the greatest thing since sliced bread because you got everything in one bite. (Hehe, pun intended).
It also helps keep the jelly from making the bread soggy… perfect for going inside a lunchbox!
I will admit, I sampled these roll ups while we were making them because they reminded me of being at grandma’s house when I was little.
Cut the crust off each slice of bread. Roll each slice out until it’s thin and flat.
Spread a layer of pb&j on one slice of bread. Top with another slice and spread another layer on top.
Roll the sandwich up and cut into 4 equal pieces.
This makes 8 little peanut butter and jelly rolls, which serves two.
If you have particularly hungry little helpers on your hands, it’s easy to make more.

- ¼ cup Smuckers Strawberry Jam
- 4 slices of bread
