Spring break just ended here in our neck of the woods.
This means that with the exception of a couple random days here or there, we are full steam ahead until summer break.
Summer break starts June 5 if you were wondering. It’s the beginning of April now.
I had a little pep talk with myself about this over the weekend, as our break was coming to a close.
“You can do this. You have totally got this. Everything will be fine.”
Needless to say, it’s a busy time of year for us.
Of course, there is school — all three of my boys go to a different building each day. They start and end within a 20 minute window of each other. You can imagine what that’s like to coordinate all the dropping off and picking up!
Then there are extracurriculars like piano lessons and track plus time with friends.
I’m busy working.
I also decided now would be a great time to do a bathroom remodel.
We’re starting to clean up the yard in preparation of a friend’s open house.
Oh and let’s not forget I just registered for my first triathlon. Fool.
I’m a glutton for punishment, obviously.
And in the middle of all this activity, I made a commitment to myself and to my family that we would sit down and have proper family meals. Like eating at the same time. At the table. With real food, from scratch, as often as possible.
It was one of my 2018 goals because we got so busy during 2017 that we got away from it.
And I missed those nightly conversations where we talked about our days and what we were thankful for. Those moments are precious and I hold those memories dear.
So I needed to make sure we started doing it again.
In order to be successful with this endeavor, I need to make meals that we’ll all enjoy and that I don’t have to slave over in the kitchen.
Because mama ain’t got time for that.
Meal prep happens in between writing blog posts, practicing 1st grade sight words, hearing about 8th grade drama and doing Kindergarten work sheets.
Multi tasking is the name of the game over here.
When I say I need wholesome, hearty, simple meals — I’m not kidding.
My boys are BIG eaters and they all love chicken recipes.
I almost always have a couple of packages of chicken breast in the fridge, ready for dinnertime prep.
The chicken and rice recipe I’m sharing with you today has only six ingredients and is ready in less than half an hour.
It’s one of Walmart’s Make Meals That Do More recipes. I’ve tried several of their meal ideas and they’re all good!
These recipes focus on great meals that save both time and money so you can focus on what’s important to you and your family.
Ingredients Needed for Italian Chicken and Rice
Gather your little helpers and snag these easy ingredients out of your pantry. Dinner will be ready in a flash!
You’ll need I Can’t Believe It’s Not Butter!® Spread, a package of Knorr® Rice Sides™ – Chicken flavor, chopped sun-dried tomatoes, grated Parmesan cheese, thin asparagus and a pound of boneless, skinless chicken breasts, sliced.
I’ll also let you in on a little secret about how I’m making my time stretch further during these busy days. Walmart Grocery Pickup.
I select the items I need online and then swing by the store to pick everything up, right at the curb. Someone else does all the shopping and bagging for me. I don’t have to stand in a check out line.
It’s insanely easy.
I’m able to continue on my day, all while saving money and still enjoying quality, fresh ingredients.

How to Make Chicken and Rice
I always begin by making sure my ingredients are ready to go. This means measuring items out and chopping all at once so I’m not starting and stopping once I get going.
For this recipe, you’ll want to cut your asparagus into one inch pieces, which will yield you about two cups worth of asparagus. You’ll also want to have your sun-dried tomatoes chopped up and your Parmesan cheese grated.
Once that’s done, you can get started cooking!
First, melt your I Can’t Believe It’s Not Butter Spread in large nonstick skillet over medium-high heat and cook the chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes. Remove chicken and set aside.
Prepare Knorr® Rice Sides™ – Chicken flavor in same skillet according to package directions, stirring in asparagus and sun-dried tomatoes during the last 5 minutes of cook time.
Stir in chicken and sprinkle with Parmesan cheese before serving.
Sometimes my boys like to add extra Parmesan on top so it’s extra cheesy. Totally a personal preference! 🙂
As a side note: my boys would eat Knorr Rice Sides at literally every meal if they could. They love every single flavor and I love how easy it is to make!
How to Reheat Chicken and Rice
In order to not turn your rice into dry, little pebbles when reheating, you’ll want to add a splash of chicken stock or water to your dish.
I’ve used this trick in the microwave and on the stove.
In the microwave, I add a dash of liquid and then pop the lid on the container and mic for a minute or so, checking to see how things are reheating.
On the stove, I put everything back in a skillet with a dash of liquid and stir often to keep things distributed as it reheats.
What to Serve with Chicken and Rice
As I said, I usually make this with chicken breast. However, you can use chicken thighs if your family prefers as well.
You could make your chicken ahead of time, making this recipe even simpler to bring together. If you’re really pressed for time, you could grab a rotisserie chicken at Walmart while grabbing your other groceries to eliminate cooking the chicken altogether.
This is such a simple one pot meal, you don’t have to serve it with anything — it’s hearty on it’s own.
If you want something to go along with it, you could serve some fresh fruit or a chopped salad.
My boys love bread so there is usually some variation of rolls, muffins or bread on my dinner table as well.
If for some reason your family doesn’t love asparagus (I don’t understand this… but some things are not for me to know…) then you could try using broccoli.
That’s one great thing about getting in the kitchen — you can experiment with flavor combos and recipes to create something your whole family will enjoy.

- 1 Tbsp. I Can't Believe It's Not Butter!® Spread
- 1 lb. boneless skinless chicken breasts, sliced
- 1 package Knorr® Rice Sides™ - Chicken flavor
- 12 ounces thin asparagus cut into 1-inch pieces (about 2 cups)
- 1/4 cup chopped sun-dried tomatoes
- 2 Tbsp. grated Parmesan cheese
- Melt Spread in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes. Remove chicken and set aside.
- Prepare Knorr® Rice Sides™ - Chicken flavor in same skillet according to package directions, stirring in asparagus and sun-dried tomatoes during the last 5 minutes of cook time.
