Living in my sister-in-law’s basement has been eye opening—this is life, simplified. Since we know this is a temporary arrangement, we really limited what we brought with us. I am amazed at what I’m learning I can do without! At times there have been a few things I’ve wished I had with me, but for the most part, I’m satisfied with this arrangement. And you know what? It is really freeing to not be taking care of so much stuff. It’s making me re-think what is necessary to live the life we want for our family.
This last weekend is a good example. Our limited wardrobes mean it doesn’t take too long to do laundry. Our limited space and possessions mean it doesn’t take long to do a little house keeping. That leaves more time for being together, lingering over meals with unhurried conversation, and getting outside to enjoy the awesome spring weather. A body could get used to this!
Being able to spend more time with Mike’s sister and brother-in-law has been awesome—Mike hasn’t lived with his older sister for 29 years! Knowing Mike and I were going to have some extra time with them Saturday evening, I wanted to make something special for the evening, but in the spirit of our current situation, I didn’t want to feel pressured or take a lot of time for prep. I picked up a few ingredients to create an antipasto board. I gotta say it looked appealing, tasted wonderful and it hardly took any time to pull it off. A body could get used to this!
I love the spicy taste of salami. A good salami and cheese sandwich has always been one of my favorite sandwiches, and now I’m impressed with how well salami pairs with pungent marinated flavors, nuts, and dried fruits. The combination is really appealing, both visually and gastronomically. It’s one to remember when you don’t have much time to prepare and yet want to serve guests something fancy.

How to Create an Antipasto BoardPrint Pin Rate
- ANTIPASTO BOARD
- ½ cup marinated olives
- ½ cup marinated artichokes
- ½ cup apricots
- ¼ cup dried cherries
- 1 package salami
- 1 cup marinated mozzarella balls
- ¼ cup cashews
- ¼ cup pistachios
- 1 baguette
- Diagonally slice baguette into ¾ inch slices. Toast at 400 degrees for 4-5 minutes.
- Arrange ingredients on a platter and serve. Toast each other for at least 4-5 minutes!
