Because this is my ultimate end goal, I’m aware of it in everything we do and I look for ways to help them with this whenever possible.
Trust me, I don’t always get it right. But I try.
I’m a boy mom, so this show hadn’t crossed our watch list yet. But I have friends with little girls who started talking about the show and I loved what I was hearing.
Nella is an animated preschool series about an unconventional 8 year old princess. Nella is more than a princess, and more than a knight. She’s the princess-knight! With the help of her friends Sir Garret, Trinket, and Clod, Nella breaks barriers, challenges expectations, and fights for justice on every adventure.
Let me tell you: I love unconventional heroes. LOVE.
Nella possesses qualities like compassion and grace but also rocks courage and determination.
The entire show promotes self-confidence, inclusiveness and compassion for others.

Plus, she always stays true to herself. Something that I think can be increasingly hard for kids (or really anyone) to do these days.
I so appreciate shows that my kids can enjoy that also help cement those qualities that I talk about all the time.
We recently had some friends over to watch an episode of Nella and to enjoy some cupcakes together.
Chocolate cupcakes are always a big hit at our house. Especially when the kids get to decorate them on their own.
I decided to make little DIY cupcake kits so that each of the kiddos could enjoy making their own special cupcake.
Anything with sprinkles and frosting and the kids are in heaven.
I think the little boxes turned out super cute as well and were very convenient.
This would be a great idea for a birthday party activity!
To make it even more special, I added some special Nella touches. I love how they turned out!
I think this easy recipe make for the best chocolate cupcakes. It’s semi-homemade so it’s a quick way to have a yummy treat that tastes like it’s totally from scratch.
They’re delicious and moist, the best kind of cupcakes in my opinion. I may have licked the batter bowl as I was preparing it. 😉
You could also use this recipe to create one large, whole cake another time if you’d like.
But obviously, for our project, we’re making individual cupcakes so each little one has a chance to decorate to their heart’s content.
I also made a smaller layer cake as well. It turned out so cute!
Ingredients to Make Chocolate Cupcakes
Let’s gather what you’ll need…
Grab a box of Dark Chocolate Fudge Cake Mix plus a box of instant chocolate pudding mix. You’ll also need eggs, sour cream, vegetable oil, milk, vanilla and salt.
Ingredients for Buttercream Frosting
You’ll need butter, powdered sugar, vanilla and three different colors of food coloring.
We did teal, purple and pink for ours.
How to Make Delicious Chocolate Cupcakes
Start by combining all ingredients in a large bowl and mixing well.
** If making cupcakes and a little layer cake, place 6 cupcake liners in a cupcake pan and fill 2/3 of the way with batter. Reserve the rest for the cake.
Line a 6-inch cake pan with parchment paper and spoon 1/3 of the cake batter (which will equal a little more than one cup) of the batter into the cake pan.
Fill your cupcake pan with remaining batter to make cupcakes.
How Long to Bake Chocolate Cupcakes
Bake the cupcakes for 20 minutes and the cakes for 20-25 minutes — or until a toothpick inserted in the middle comes out clean — according to package directions.
Remove from the oven and let everything cool.
How to Make Buttercream Frosting
In a stand mixer fitted with the whisk attachment, whip together room temperature butter, powdered sugar and vanilla until light and fluffy. Divide into 3 bowls and add food coloring to each one.

To assemble your kits, you’ll want these items…
- Cupcake boxes (with inserts)
- 2 ounce plastic snack cups with lids (3 per kit)
- cupcake liners
- cupcake toppers
- sprinkle mix
- crinkle paper filler

How to Make a DIY Cupcake Kit
Begin by filling two of the snack cups with frosting and one with sprinkles. Place lids tightly on each and set aside.
** If you’ve made a layer cake, make sure to reserve the rest of the frosting to go on the cake!
In the bottom of the cupcake box, add a layer of paper filler, then place the insert on top.
In the slots, you’ll place a cupcake, frosting and sprinkle containers.
Place the frosting knife and cupcake topper on top.
Close each box and tie with ribbon.
Aren’t they so cute?! I love how they turned out!

While the kids worked on their cupcakes, we talked about ways we can help others and what it means to be your own hero.
After they were done creating, they were able to enjoy the fruits of their labor.
And enjoy they did!
Both my boys really enjoyed Nella the Princess Knight and enjoyed having their friend over too. They had so much fun, they promptly requested a sister of their own. Ha!
There were giggles galore and I had a blast seeing each of their creativity shine through and hearing their ideas for making the world a better place.
Oh, to be a child again!

Chocolate Cupcake Recipe with Buttercream Frosting
