This delicious cheesy potato casserole is a comfort food staple and a delicious side dish, just like mom used to make. Shredded hash browns, creamy soup, and spices are mixed together before being finished off with a crunchy topping and baked to golden brown perfection.

You’ll need:

  • 1 can of cream of chicken soup
  • ½ cup of butter, melted
  • 1 tablespoon of garlic salt
  • Salt and black pepper to taste
  • ½ cup of chopped onions
  • 2 cups of sour cream
  • 2 cups of shredded cheddar cheese
  • 2 pounds of frozen hash brown potatoes
  • 2 cups of cornflakes, crushed 
  • ¼ cup of butter, melted

Substitutions And Additions

HASH BROWNS: I use frozen shredded hash browns, but you could also use diced or cubed potatoes or even tater tots for a fun twist.

SOUP: Swap out the cream of chicken soup with cream of mushroom soup in this simple side dish — or mix in a ranch packet. 

CHEESE: Add ½ cup of cream cheese for added creaminess. Swiss cheese would also work well in this simple, creamy dish. For even more flavor, you could also sprinkle the top with parmesan cheese. 

CORNFLAKES: Instead of the cornflake topping, top this casserole with Ritz cracker crumbs, panko bread crumbs, crushed croutons, or crumbled potato chips.

GARNISH: Top with crispy fried onions, bacon bits, fresh parsley, scallions, or green onions.

ADD-INS: You can make these cheesy potatoes with meat for a big, hearty meal: ham, hamburgers, bacon, or sausage. Make it Tex-Mex style, and add Rotel to the mix for an added kick. You could add broccoli or peppers as well.

How To Make This Cheesy Potato Casserole Recipe

PRO TIP:

Double this recipe when you are serving a larger crowd on special occasions or at family gatherings.

STEP ONE: Preheat oven to 350°F. Prepare a 9×13 casserole dish with nonstick spray and set it aside.

STEP TWO: In a medium bowl, combine the canned soup, ½ cup melted butter, garlic salt, salt and pepper, chopped onions, sour cream, and cheddar cheese.

STEP THREE: Place the hash browns in a large bowl. Pour the soup mixture over the hash browns and stir the potato mixture until well combined. Pour the mixture into the prepared pan.

STEP FOUR: Combine the crushed cornflakes and remaining melted butter and sprinkle cornflakes evenly over the top of the casserole.

PRO TIP:

You can put this together the night before, cover it well, and put it in the fridge. Before baking, uncover and let sit on the counter for 30 minutes.

STEP FIVE: Bake casserole for 45 to 55 minutes.

PRO TIP:

Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to check your casserole at the lower end of the recommended baking time.

How To Serve This Cheesy Potatoes Bake

Potato casserole is the perfect side dish, along with meatloaf and beer marinated grilled chicken.

Serve it alongside other classic side dishes, including vegetable casserole and fried rice or garlic bread and a side salad.

Storing This Cheesy Potato Bake

IN THE FRIDGE: Store leftover potato casserole in the fridge for up to three days.

IN THE FREEZER: You can freeze this cheesy potato casserole for up to three months. For the whole dish, I would recommend using a throw-away aluminum pan so that your good baking dishes aren’t tied up in the freezer.

    I make this all the time, but instead of adding crushed corn flakes, I crush up cheddar and sour cream potato chips and mix them with butter then spread on top!!! Such a great addition!!!
