We slice our potatoes nice and thin, then grab lots of butter, mozzarella, and cheddar, plus green onions and bacon for the ultimate cheesy foil pack recipe cooked right over the open fire.

The combination of tender, golden potatoes with melted cheese, savory bacon, and a sprinkle of green onions creates a flavor explosion in every bite.

Roasting the potatoes over an open flame not only infuses them with smoky goodness but also gives them a slight char that adds to the overall deliciousness.

You’ll need:

  • 1½ pounds of red potatoes (about 4 to 5)
  • Salt and black pepper, to taste
  • 2 tablespoons of butter
  • ⅓ cup of bacon pieces
  • 2 tablespoons of green onions
  • ½ cup of mozzarella cheese, shredded
  • ½ cup of cheddar cheese, shredded
  • heavy-duty aluminum foil

PRO TIP:

It is best to use heavy duty foil for this recipe to ensure that it doesn’t tear during the cooking process.

Substitutions And Additions

CHEESE: You could swap out the cheddar and mozzarella cheese for any type of shredded cheese that you prefer in this great recipe.

How To Make Cheesy Campfire Potatoes

While your fire is getting going, you will prepare the foil packet containing all of the tasty ingredients. Once it is ready, let the fire do all of the work and you will be rewarded with cheesy, delicious potatoes.

STEP ONE: Start by spraying a 24-inch piece of heavy-duty aluminum foil with cooking spray.

You don’t want to skip spraying the foil, otherwise, all your ooey-gooey cheesy goodness will get stuck on the foil instead of your potatoes! 

STEP TWO: Prepare your fire with either wood or charcoal. Let it burn down until ash gray with moderately hot coals but no big open flames.

STEP THREE: Thinly slice your potatoes and place potatoes in the middle of the foil. Add salt and pepper to taste.

STEP FOUR: Thinly slice the butter and place it on top of the potatoes.

STEP FIVE: Add the bacon pieces and green onion on top of the potatoes.

STEP SEVEN: Fold the foil up over the potatoes and fold in the edges of the foil to make a foil pack.

STEP EIGHT: Once you have your potato foil packet assembled, you will place potato packets over the fire or grill on medium heat and cook for 20 minutes, depending on the thickness of the potatoes.

Transfer packets to a plate and open them carefully.

PRO TIP:

Remember anything cooked over the open fire will be hot when removing, grill with care! Open packets carefully in case any hot steam rises from them.

    These are fantastic. At home I don’t waste the single use foil; I just cook them low & slow uncovered. I also add sweet bell pepper and chopped garlic. If I have the time I also add chopped onion, and chopped “what ever veggies I have on hand” including uncooked squash chopped up. A package of stir-fry chopped smaller is also tasty. I love your recipe.
