  • Funfetti sprinkles for decorating

CAKE MIX: While this easy cookie recipe calls for funfetti mix, it would still be delicious if you would like to use different cake mix flavors for these easy cookies.

MIX-INS: There are so many different mix-ins you can add to this basic recipe to take it to the next level.

Nuts, white chocolate chips, peanut butter chips, or milk chocolate chips would all work well.

SPRINKLES: Change up the sprinkles you use to coat the icing to match the season.

FROSTING: Customize your cookies with your favorite flavor of frosting. Chocolate, strawberry, or any other ones you can find at your grocery store will taste great!

How To Make This Cake Mix Cookies Recipe

It is super easy to mix up the cookie dough for these colorful treats. Let’s dive in.

STEP ONE: Preheat the oven to 350°F. Line a cookie sheet with parchment paper.

Spray your cookie sheet lightly with cooking spray, and then lay the parchment paper down. The sprayed sheet helps the parchment paper stay in place.

STEP TWO: In a large bowl, mix together by hand the box of cake mix, oil, melted butter, and eggs.

Stir with a big wooden spoon just until combined. Don’t overmix. 

PRO TIP:

If you forget to bring your eggs to room temperature, gently place them in a cup of warm water for a few minutes to warm them up.

STEP THREE: Using a large cookie scoop (two-tablespoon size), drop cookie dough balls onto a cookie sheet about two inches apart.

PRO TIP:

You can make these delicious cookies as big or as small as you like!

STEP FOUR: Bake for 11 to 13 minutes or until the bottom edges of the cookie start to show a brown edge.

They may seem a little underbaked, but once the edges look a little crisp.

Remove them from the oven and let them cool on the baking sheet.

PRO TIP:

If you want perfectly round cookies, as soon as they come out of the oven while they are still hot on the pan, use a large round cookie cutter!

Carefully place it over the cookie and swirl the hot cookie around in it. This will help round off the edges of the cookie.

Move quickly to do this while the cookies are still warm. Make sure you hold the cookie sheet in one place using a potholder.

STEP FIVE: In a small microwaveable bowl, place the vanilla icing.

Microwave on 50% power in 10-second intervals until the icing is melted. I used a 1-cup Pyrex glass measuring cup. 

STEP SIX: Dip the cookies halfway down into the melted icing.

Lay on parchment paper or a drying rack and sprinkle with the candy sprinkles while the icing is still warm.

STEP SEVEN: Let the icing cool and harden before serving.

PRO TIP:

The icing will be sticky on the bottom of the cookie until it fully sets up in five to six hours. The icing on the top will firm up quicker.

    I used this recipe, except for the icing, on both a Funfetti cake mix AND a Caramel Turtle brownie mix and they were deliciously easy & hubby & I find it now hard to keep any in the tin! My favorite is the Turtle brownie Brookie – I added walnuts, used cacao grounds & a quarter bag of Twix pieces to the mix; and to the Funfetti cookie, I added unsweetened coconut. I’ve shared pictures & recipe on FB, directing others to check your site out for themselves for additional hints.
