These half-brownie, half-cookie treats somehow manage to combine the best of both worlds into one irresistible dessert.

Picture the rich, chocolatey flavor of a perfectly baked brownie paired with the chewy texture and sweet undertones of a classic chocolate chip cookie. The result is a decadent treat that will leave your taste buds dancing.

You’ll need:

  • 1 box of brownie mix, plus the additional ingredients listed on the box (usually water, oil, and eggs)
  • ½ cup of salted butter, softened
  • ⅓ cup of granulated sugar
  • ⅓ cup of light brown sugar
  • 1 egg
  • ¾ teaspoon of vanilla extract
  • 1 cup + 2 tablespoons of all-purpose flour
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1¼ cups of semi-sweet chocolate chips

Substitutions And Additions

EXTRA CHOCOLATE CHIPS: Try sprinkling ¼ cup of semi-sweet chocolate chips or chocolate chunks over the top of the brookies before baking for an extra touch of chocolate.

MILK CHOCOLATE CHIPS: We do not recommend using milk chocolate chips in these homemade brookies as they tend to burn too quickly. Semi-sweet chips are the way to go for this delicious treat.

How To Make This Brookies Recipe

Our step-by-step instructions will walk you through making the brownie batter and topping it with spoonfuls of cookie dough to create this sweet treat.

STEP ONE: Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper with overhanging sides.

STEP TWO: Mix up the brownie batter according to the package directions. Pour the brownie mixture into the prepared pan and set it aside.

STEP THREE: In a medium bowl, add the softened butter, white sugar, brown sugar, egg, and vanilla extract. Using an electric hand mixer or stand mixer, beat until the butter mixture is light and fluffy. Set aside.

STEP SEVEN: Bake the brookies in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the brookies comes out clean.

PRO TIP:

Ovens can vary quite a bit, so always rely on the toothpick testing method to tell you when the brookies are done.

STEP EIGHT: Let cool in the pan for 15 to 20 minutes before serving.

These brookie cookie bars would be perfect served with a cold iced tea or make things extra fancy with a Wendy’s Frosty to wash them down.

Of course, you could also use this half-cookie, half-brownie treat for the base of a larger dessert with a scoop of vanilla ice cream on top.

MAKE AHEAD: If you’re looking to get a head start on your baking or want to prepare brookies in advance, you can make the dough ahead of time and store it in the refrigerator. Simply follow the recipe instructions up until the point of baking, then wrap the dough tightly in plastic wrap or place it in an airtight container.

It can be refrigerated for up to 24 hours before you’re ready to bake. When you’re ready to bake, remove the dough from the refrigerator and let it come to room temperature for about 10-15 minutes before proceeding with the recipe.

IN THE FRIDGE: Keep these brookie bars in the pan and covered tightly with plastic wrap, or transfer them to a food storage container with a lid. They will keep in the refrigerator for up to five days.
