These White Chocolate Chip Cookies with Bacon are an easy homemade treat with a unique flavor!

If you’ve been around Spaceships and Laser Beams very long, you know that I’m passionate about baking.

I love to prepare yummy treats for those that I love. And I also enjoy experimenting with new ingredients and flavor combinations.

With family coming into town soon to stay with us, I’m in full on prep mode to get ready for their arrival.

This means I’m sprucing up the house and I’m baking up new treats to share with them. I’m excited to share them with you today!

A few years ago, I started using coconut sugar in my cookies — and now it’s how I make them about 90% of the time.

The coconut sugar and white chocolate together in this recipe is killer!

Sooo good. The best. My mouth is watering just thinking about it.

Coconut Sugar for Ultimate Cookies

If you’re nervous to try coconut sugar, you can definitely use a  mix of brown sugar and white sugar in this recipe… but I would really encourage you to give the coconut sugar a try.

Anyways — the ultimate cookie base.

One of my favorite things about this cookie dough is that it really is an excellent base for any mix in I want to try.

I have used a lot of different mix in ideas and I love how versatile you can get with this recipe.

Ever wonder what to bake with white chocolate chips?

I’ve done a big range of flavors: cranberry, macadamia nut, oatmeal, pumpkin, raspberry, peppermint and lemon. Of course, I’ve also tried peanut butter, a variety of candies plus milk chocolate and dark chocolate.

I’ve made several kinds of white chocolate chip cookies as well.

Let me tell you, I have made a lot of white chocolate chunk cookies in my day — you can’t go wrong!

I’ve got a new mix in idea that I’m sharing with you: bacon.

For today’s recipe, I experimented two ways.

First, I tried baking the dough after it had been rolled in bacon.

Second, I tried sprinkling the bacon on right after it came out of the oven.

The winner was rolling the dough in bacon before it was baked!

Although, if you’re wanting to try something new, I would definitely try adding a cup of cooked, chopped bacon to your cookie dough before you cook it to see what you think!

Ingredients for White Chocolate Chip Cookies with Bacon

Let’s gather what you need. Remember, this is my ultimate cookie base for starters.

You can get creative on your own with the mix in ideas if you want to.

You can’t go wrong with delicious homemade white chocolate cookies, trust me. 🙂

You’ll be using butter, coconut sugar, an egg, instant coffee, vanilla, flour, baking soda, salt, white chocolate chips and bacon, cooked and crispy.

As always while baking… I suggest a few extra pieces of chocolate for munching while you work.

It might be wise to also make a little extra bacon as well… because who can resist that crispy goodness? Not me.

How to Make White Chocolate Chip Cookies from Scratch

This recipe for white chocolate chip cookies is easy peasy.

My boys love to help in the kitchen, so I suggest enlisting little hands to help if you have them available!

To begin, you’ll grab a large bowl and cream together the butter, instant coffee and sugar.

Add in the egg and vanilla, then cream until smooth.

In a separate bowl, mix together flour, baking soda and salt.

Slowly add to the butter and sugar and mix until dough comes together.

Next, stir in the white chocolate chips.

Roll into large balls and roll the tops of the dough balls in the chopped, crispy bacon.

Place on a baking pan lined with parchment paper and bake at 375 degrees for 10-11 minutes.

While the cookies bake, I take advantage of the time to get a little cleaning done. It’s amazing how much you can accomplishment in only a few minutes when you’re moving quick. 😉

Ingredients

  • 1 cup butter
