Sweet Potato Biscuits with Cinnamon Brown Sugar Butter

Breakfast food is a big deal in our home. It’s certainly not limited to just morning hours, either! One of the most requested dinners in our family is breakfast food. It’s warm, comforting, and always a crowd pleaser. I love being able to mix sweet and savory for a filling meal that everyone enjoys. However, and it is a big however, when it comes to actual early morning breakfast time, over the past few months, I have struggled with getting myself anything but plain toast. Sam just started school this year and our morning routine has completely changed. It’s taken a while, but I now have a new food option for the morning that tastes amazing and works on the run: sweet potato biscuits with Gay Lea’s cinnamon and brown sugar butter.

I have always loved the taste and health benefits of sweet potatoes. They’re one of my favorite foods. About a decade ago, I interviewed sweet potato farmers for a story about the local farmer’s market. They had been tobacco farmers, who decided they wanted to grow a different crop. They researched what would be the opposite of tobacco in terms of health benefits and landed upon sweet potatoes. That story has always stuck with me.

The sweet potato biscuit recipe I use is based on one I found from another blogger when I was researching unique ways to use sweet potato for a post. I like to throw in a little of this and a little of that when I am in the kitchen, so I took her recipe for sweet potato bread and changed it up a bit. I cut the sugar and butter in half, used two eggs and two egg whites and used fat free sour cream. They are still every bit good!

Every morning I have been having a sweet potato biscuit headed with cinnamon and brown sugar butter on my way out the door.  My only problem now? The taste is out of this world and it’s hard to stop at just one.
