Summer Entertaining: Pineapple & Pork Skewers #MazolaCornOil

Now that summer has officially kicked off, I am looking forward to lots of time outdoors. We have all our patio furniture out and Mike has the grill ready to go. We love to have friends over to cook out with us during the lazy summer evenings. We enjoy the time visiting and eating while the kids are free to run around the yard and get their energy out. It’s a win-win! Mike and I both like to experiment with new recipes and flavor combinations, especially when grilling. 

Pineapple & Pork Kabob

Over the weekend, we had friends over for dinner. I found a new recipe on that I was looking forward to trying — here was my chance! Since Mazola® Corn Oil has a neutral flavor, it’s perfect to use when cooking as it brings out the flavors of other ingredients. With it’s high smoke point, it’s a great all-purpose oil that I use for everything from sauteing to grilling and even in my baking. {Check out these cute football cookies and my Halloween brownies.} I was also surprised to learn that corn oil has more cholesterol blocking plant sterols than other cooking oils, almost 4x more than olive oil. A recent study in the Journal of Clinical Lipidology found that corn oil helps lower cholesterol more than extra virgin olive oil. Amazing, huh?!


All those perks aside — it’s a better-for-you ingredient that makes your food taste yummy! These pork skewers also boast onions and pineapples topped with an amazing glaze that will wow guests with flavor.

Pineapple & Pork Skewers


  • 1/2 cup Mazola® Corn Oil
  • 4 (3-inch) sprigs rosemary
  • 5 (3-inch) sprigs oregano
  • 4 garlic cloves, crushed and peeled
  • Kosher salt
  • Freshly ground black pepper
  • 2 pounds pork tenderloin, cut into 24 (2-inch pieces)
  • 1 large red bell pepper, cored, seeded, ribbed and cut into 24 (1-inch) pieces
  • 1 medium red onion, cut into 24 (1-inch) pieces
  • About 2/3 peeled and cored pineapple, cut into 24 (1-inch) pieces

Passion Fruit Glaze

  • 1/2 cup passion fruit nectar
  • 2 tablespoons ketchup
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1-1/2 tablespoons honey
  • Kosher salt
  • Freshly ground black pepper
  • 1 head butter lettuce, leaves separated into cups
