Roasted Red Pepper Pesto & Feta Appetizers #bringtheheat #mezzetta

By  | Last Updated:

Those of you who read my blog regularly know that as of the beginning of June I left my job with the marketing/PR agency. It was a great run and I enjoyed what I did, but I am so excited about this new season. The transition is still a fresh thing and right now I am reveling in some down time. Although I’m sure we’ll be taking a few long weekends away this summer, Mike and I are mostly looking forward to just hanging out at home together. More family time with Sam—he’s growing so fast!—and more time for friends sounds like the perfect staycation this summer.

Roasted Red Pepper Appetizers

We’ve been spiffing up our backyard the past couple of weeks. Our yard is just the right size; there’s enough green space for Sam and his friends to run around but it’s not so huge that maintenance is a problem. We love to kick back on our deck. We spend a lot of time there and frequently grill during the summer months. One of our friends recently commented how our food combos always wake up her taste buds. I can’t wait until the next time she comes over so I can share this new recipe for Roasted Red Pepper Pesto and Feta Appetizers. It will wake up her mouth for sure — Mezzetta peppers bring the heat to summer eats!

Summer Appetizer Recipe

Savory Tarte Shells from Scratch

Roasted Red Pepper & Feta Appetizer

  • 1.5 cups flour
  • 1 stick butter
  • 4 tablespoons cold water
  • 1 teaspoon melted butter

Preheat oven to 350 degrees. Combine flour and butter on “stir” in mixer. Add water, a tablespoon at a time. Mixture will be in large crumbles. Roll into small balls and place into mini cupcake pan. Press tart tamper into each dough ball to create indents. Brush melted butter over tarts before placing in oven. Bake for 20-25 minutes or until golden brown. Makes about 18 tarts.

Combine red peppers, pesto and feta in bowl. Spoon onto cooked tart shells. Top each tart with remaining feta.

In addition to the burst of flavor they add, one of the things I like about the Mezzetta peppers is their convenience. Anyone who has ever cooked with spicy peppers knows how much fun it isn’t to have to clean out those hot seeds…and then remember not to touch your face or itch your eyes or rub your nose. With the Mezzetta peppers you get all of the great, spicy taste without the hassle.

For June, July and August, the Mezzetta website is showcasing simple ways to spice up summer eats. They will also be hosting an online giveaway for a Summer Survival Kit each of the summer months. June’s survival kit includes: an apron, napkins, a towel, beach ball, cutting board and a water bottle. If you visit their website each month you’ll have 3 chances to win.

You bring the sunshine — Mezzetta will bring the heat!

Stephanie is in love with a boy named Sam. He has taught her that it’s okay to jump first and look later, to wear a dirty shirt to the park and to decide that today is a good day to take a nap in your rubber boots. She hangs out here blogging at Spaceships and Laser Beams and at our printable party shop on Etsy.
