Peanut Butter Oatmeal Cookies

These easy, homemade peanut butter oatmeal cookies are our absolute favorite!

Simple and delicious, peanut butter and chocolate chips combine to create the best oatmeal cookie recipe ever. They are soft, chewy, moist and packed with flavor. I think the oatmeal adds a wonderful taste and texture.

My little guys loves to help bake them. These easy cookies come together in about 20 minutes, making them a great, quick snack. They’re the best!

Peanut Butter Oatmeal Chocolate Chip Cookies

I’m reminded daily when they help me in the kitchen or when they learn to do new things that — surely, steadily — my little boys are growing up.

When the opportunity arose to partner with Mirum and Schwinn for this post, they were both over the moon — especially Dax — to be able to get a new “big boy” bike. Be still my heart. And I get to share one of my favorite cookie recipes ever.

I’ve always loved to bike — it’s one of my preferred methods of exercise and it’s so much fun to do together as a family. I ordered a Schwinn SmartStart bike for Dax plus new, matching helmets for both boys from kohls.com. I was pleased by how quickly it arrived!

When it was delivered, my husband Ryan put the bike together. The boys anxiously awaited the bike being fully assembled and ready to ride. Ryan showed them how the hand brake worked and they thought that was the coolest. Oh, to be little again.

In the middle of the riding fun, the boys started telling me they wanted a treat. Little did they know I already had a plan.

I knew these oatmeal peanut butter cookies would be a big hit. This recipe is simple, quick and delicious! Perfect for an afternoon treat to enjoy as a family.

Ingredients for Peanut Butter Oatmeal Cookies

I bet you have most of these ingredients in your cupboard already. Let’s gather what you need:

  • butter
  • peanut butter
  • brown sugar
  • white sugar
  • one egg
  • vanilla
  • flour
  • quick cook oats
  • baking soda,
  • baking powder
  • salt
  • semi sweet chocolate chips

If you’ve been around Spaceships and Laser Beams very long, you know that when we bake with chocolate chips we always reserve a couple handfuls for munching as we work. 🙂

I used smooth peanut butter, but if you prefer crunchy, you could use that as well.

These old fashioned cookies come together in an instant!

First, in a large bowl, cream together butter and both sugars until fluffy.

Then add in the egg and vanilla and mix well.

Mix your dry ingredients together in a separate bowl.

Slowly add the dry ingredients to the wet ingredients and mix until the dough comes together. Stir in the chocolate chips.

Roll spoonfuls of dough into balls and place on a baking sheet lined with parchment paper.

Bake at 375 degrees for 10-12 minutes.

My boys loved these cookies. They were the perfect balance of chewy, soft and crisp.

They really are the best peanut butter oatmeal cookies we’ve ever had.

Rowen could hardly help himself they were so good.

I had popped into my office to work for a moment while the cookies cooled enough to eat on the counter. Rowen was busy playing in the living room as I worked. When I exited my office, Rowen was sitting with a blanket over his head. I immediately knew he was up to something.

“Rowen… are you eating the cookies”?

He slowly took the blanket off his head and looks at me with his big blue eyes and chocolate on his face. A smile broke over his face and he nodded.

When I headed into the kitchen, I realized that three cookies were missing… three!! I turned back to Rowen and asked how many he had ate.

Three fingers went up. At least the little sneak is honest!

Later, I served them with a cold glasses of milk — the very best way to enjoy a cookie in my opinion.

Yes, you can freeze peanut butter oatmeal cookies! Just make sure they’re cooled before putting them in an airtight, freezer safe bag or container. Thaw before serving.
